I am working with a 2016 Optima EX the radio needs an update to enable CarPlay as it only has Android Auto. The dealership wants $500 to update the radio which is unacceptable. It has an SD card in the slot. I am trying to figure out how to update it myself but I am not sure exactly how and if it involves a USB drive to the USB port or just the SD card I can't find much online about it. The radio is a model that has factory navigation. Any help is appreciated.

I did the update yesterday to my 2019 Optima EX, just go to Official Kia - Navigation Update Website, download the Navigation Updater and follow the steps, it will tell you if you have to use a USB drive or a SD card. Although as your head unit has a slot, it's almost certain that you'd need to use a sd card.
It has to be a 32GB SD card, not smaller of larger and not a micro-sd with an adapter.

Anyway, the software will copy the necessary files to the sd card, then you insert it into the car sd slot while your car is running and in park. Takes about 30 minutes so you'll be idling for a while, keep that in mind because once you start the update it cannot be interrupted.
