My 2012 Optima take P205/65R16 tires. My Dealer tells me I have to go down to R15 Snow Tires. Is that normal?

That doesn't make sense. A quick look through TireRack.com shows several snow tires that size.

15" wheels are unlikely to fit over the front brakes on your LX.

My 235/45-18 winter tires work fine on the SX Luxury wheels, but I rarely need to drive through deep snow, where narrower tires have advantages.

If you can get a 15" wheel to fit, yes that is the traditional thinking. You want your snow tire to have a tall sidewall. Some also argue being narrow is also preferred.
