My check engine light came on today and when I scanned it, it said MAP sensor and to replace the ambient temperature sensor. What is this sensor for and is it vital to replace immediately?

the MAP (Manifold Absolute Pressure) sensor detects the pressure past the turbos so the engine can adjust the fuel delivery accordingly. With the MAP sensor not communicating, the engine can only use the O2 sensors to adjust the fuel ratio which is not as quick and often causes lean or rich fuel loads as the O2 doesn't account the rpm changes as quickly and will cause premature engine damage. The IAT sensor (intake air temperature) that you mention needs replacing measures the temperature of the air pre-turbo (or possibly post turbo as it might be built into the MAP), which with the MAP helps to give the best info for the density of the air and therefore the amount of fuel to inject for the given RPM.

to give the proper details of the sensor, we would need to know if you have the V6 or the I4 stinger.

If I'm not mistaken MAP for the car has built-in temp sensor, RockAuto has them, dunno if those are any good thou. SKP products are good, in case you are offered aftermarket one.
Or, just buy OEM MAP from dealer or so.
