I thought the tachometer and ESC issue could be a faulty crankshaft sensor. I bought an error code OBD2 scanner, but there are no saved error codes. Now I’m not so sure what it could be
It still could be a failing crankshaft position sensor. The rpm dropping to zero and hard starts is a clue. Not seeing a code isn't uncommon. It won't save it for some reason, but if you catch it in the act and scan it before turning the ignition off, you'll likely see a code for it. Crank sensor has been a common issue on Souls of that generation.
