My 2013 Sportage SX has an "Active ECO" dash button. With the system acitvated I get a green ECO display on the speedometer cluster. When driving should I see any visual displays in the "Supervisor Display" indicating that I am not driving in an "ECO" type mode.

No. The Active ECO makes adjustments to the way your car performs so that it is as economically as possible. You should notice that it responds slower when you try and accelerate and if you have the heat or air conditioning turned on, it will also change depending on how you are driving. Essentially, you will notice less "zip" in the way the car handles with that turned on.
