Oil guage wobbles up and down when driving, going from cold level to the level it usually is when hot. When stationary it sits at the correct temp.
However is there a problem with something?

Coolent has Temp Gauges. Oil has pressure gauges. It is normal for a OIL PRESSURE GAUGE to rise and fall while the vech is being driven due to the eng speed. Higher eng revs (constaint drivnging) make for High Pressure and gauge readings. Low revs (stopped in traffic or at a light) make for lower pressure and gauge readings. If the eng is reving and the gauge is going up and down and not staying within a few hair of the same place as coolent temps rise(aka eng warms up). Then yes you have a OIL PRESSURE sender issue or a OIL PUMP one. If you have a oil guage that when you rev eng the guage goes down but when you sit a t a stop light it goes up then you have a OIL PUMP PAN PICKUP issue. It is getting clogged breifly when sucking higher volumes of oil with revs and then getting a better prime when not reving. How often have you been changeing the oil? Sounds like it has clumps/sludge in pan. If you are not the first owner it may have had a shady past and now that you are changing it regulaly it is getting these clumps/sludge breaking up and washing out of eng and into pan. IF this is teh case and it is not a sender or pump going bad. Then two ways to fix this.
1) drop pan and clean out junk. This is the best method.
2) do more(allot more in fact) and sooner(might have to do 1000 mile ones too) oil changes and let the oil drain well. This will carry out the sludge and clumps in time and easier then dropping pan. But it is slower to see results. This will also show up over time as a better and more normal gauge reading all the time.
