Default 02 Sedona Remove Cat?

My Sedona keeps throwing code 432 & 421 and as a chance I decided to change the O2 sensors (both downstream) instead of the cats but 2 days later I got the same 2 codes again! I just order the 2 cats at the manifolds but i was wondering if anyone has taken out the 3 cat and eliminated it and if it has any effect positive or negative.
I would like to think it would help improve fuel economy and I plan on trying this soon buy wanted to know what I could expect.
Thanks for any feedback, I have owned many cars and this is my first time with a Kia.
