The other day I had to haul somthing in my Sedona so I folded down the second and third row of seats. The issue I had was the middle row of seats didnt lock into place when it was folded down. Once the seat was put back up in the up right position it locked in fine but when folded down it likes to slide back and forth. Is this normal or should it stay locked into place when folded down? Im thinking it should stay locked in place.

Ours does the same thing. I think it's because they're more designed to come out completely rather than just fold. I've always pulled them out when I need the space, or just fold the 3rd row if that's all I need.

Here in the UK, my middle row is still locked when they are folded down. I often take the middle row out and in, and sometimes have them folded, but they ALWAYS stay locked.
I have to say though that the catches are not the easiest to 'lock' when I put the seats back in, and they sometimes take three or four tries to get them to lock, and sometimes they have to be really slammed down hard to make them lock.
I don't understand your symptoms though. I wonder if your spec is different to the UK?
Here in the US the seats have a set of rails they slide on just like you would have on your front seats. The taller the person you would slide the seat back the shorter the person you slide it forward. It is sliding on those rails. The seat itself is locked into the floor of the vehicle okay.
