Can anyone help me with info regarding replacing the stereo? Do you need a wiring harness? If so, will the harnesses that fit the '03 work in the '05?

Yes you will need a wiring harness. I just checked out www.crutchfield.com and it appears that an 03 harness and a 05 harness is different on the LX model. They are giving two different item numbers. The 04 and 05 is the same. And the EX model harness it the same from 03 to 05. What model do you have?
