Your speedo is going to be off by over 5%. You'll effectively be under-reporting your mileage and you'll always be going a few mph faster than you think. I'd also think that the ride would be "floaty" and soft because of the substantially higher degree of sidewall flex. Also expect a reduction in gas mileage due to the much larger contact patch on the ground...also probably not helping your ice/snow performance. A better fit would be 255/60/17. Goodyear Assurance Tripletred and General Altimax HP (and a number of others) come in that size.
Not sure about the offset. You'd have to get it up on a lift and turn lock to lock to see about the rubbing. 265/65/17 tires are over an inch wider than stock.
