Default Spark plug gap explanation needed

Guys, can some one explain how spark plug gap affect engine running? Sorento plugs gap is 0.039 - 0.043 in. I tried already two settings - 0.039 and the other time gap was set to 0.040 in. I when gap set to 0.040 in engine runs smoother.
The gap difference is not that big, but noticeable how engine is performing.
