Unhappy Head temp sensor

I recently lost all the water from the engine when the spigot on the radiator broke in half. I'm still sobbing over the cost of repairs, AUD$2500. I would like to fit a temp sensor to the cylinder head that will instantly indicate overheating when all the water is lost. The original sensor only indicated the temp of the water. No water, no temp indication untill it is too late. Very expensive!
Is there a temp sensor that I can buy in Australia that will clamp, fit, screw or otherwise fasten onto the head that I can obtain and where from? I saw a picture of a VDO temp. gauge that fitted the sensor under the spark plug. Would this style be ok or is there another unit that would be more suitable? I can't afford this to happen again, no way!

Actually you would want a water pressure guage instead of a temp guage. This way when the water pressure drops it will let you know right away.
