Well it's going to be a
lot of work to get any V8 in (substantial firewall/tunnel mods), very tight to get a V6 SOHC/DOHC in (less mods to tunnel/FW) unless it is a small V6, ideally pushrod.
Main problem area is only having 24" from the firewall to the radiator. Engine would possible be out too far and be too heavy, requiring a complete rework of the front suspension. Body height at the hood may limit how big you can go, and the width between the suspension towers also.
You would have to lose the front diff assy or SUBSTANTIALLY beef it up to maintain 4WD (not strong enough, I have broken two diffs), and need a new transmission (+ transfer case) and beefed up rear axle to handle any extra power.
Only engine conversion I have heard of is a Nissan SR20T (or its DET stablemate) being slipped into the engine bay in front of the stock transmission (manual), but have no real knowledge of what happened to it after that (Urban myth in Sydney Australia???)
I am about to put a V6 (Aussie) Commodore 3.8 litre (Nee Chevy 232), 4L60E auto with a converter to a Toyota Hilux (Tacoma) transfer case, going to beefed up diffs ("air actuated lockers" from Greece) so I have already done much of the research you seem to be heading towards. Note that I also have a 2" bodylift (body up off chassis) in order to squeeze the engine under the hood. The project has taken a bit of a pause at the moment.
